8-hour sourdough!

I finally found the quickest & tastiest sourdough recipe, thanks to @therealsourdoughmom !

Breakdown of steps below, or if you prefer to watch the video here’s that link.
1. Grab a giant bowl
2. Zero out scale
3. Add 250 grams of active starter. (Starter should be bubbly & at its peak)
4. Zero out food scale
5. Add 725 grams of warm, filtered water
6. Hand mix
7. Bowl back on scale, zero out
8. Add 25 grams of salt
9. Zero out scale
10. Add 1000 grams of flour
11. Take bowl off scale, hand mix for about 2 min
12. Cover the bowl and let sit on counter for 1 hour
13. Time for your first set of stretches. (Sourdough Mom video is super helpful for this step!) Pull up dough and fold over on top of itself, go around the bowl 10 times. That = 1 round.
Let sit on counter for 30 min.
14. Come back and do another round of stretches. You will do 4 rounds of stretches total, every 30 min.
15. After the 4th set, cover and let sit on counter for 2 hours.
16. Ready to shape! Pour flour on surface, pour dough out (might take a second for it to drop out), cut in half, then stretch and fold & do push and pulls. (Watch video for this).
17. Let rest on counter in dough balls for 20 min
18. Final shape time - stretch and fold then push & pull again.
19. Put dough balls into 2 separate bannetons. Cover with a towel, put in the fridge and proof for 2 hours.
20. Pre-heat oven to 500 degrees WITH dutch oven inside.
21. Once oven is ready, take dough out of fridge and score it.
22. Add parchment paper to dutch oven
23. Place dough on parchment paper, and bake at 500 for 30 min.
24. After 30 min, take the top of the dutch oven off, drop temp down to 425 and continue baking for another 10 min.
25. You’re done! Enjoy!
